So Simple Roasted Peppers

Grease large cookie sheet with veggie oil. Slice red and yellow peppers into rings, then split and flatten when arranging on cookie sheet. Top with seasoning of your choice ( I used McCormick Perfect Pinch Roasted Garlic & Bell Pepper).

Bake at 350 for an hour. Flip half way through.

 

 

Roast Beef

2 lb rump roast

1 stick margarine, melted

1 can beef broth

1 large onion, chopped

 

Preheat oven  to 325.

Season with salt and pepper then sear the roast in oven safe cast iron pot.   Add butter and beef broth, along with the onion after roast is browned.

Cover and bake at 325 for 3 hours.

 

First time I used my Le Creuset and I just love it!  Roast was fork tender and recipe is a keeper, per my husband. Clean up was a breeze.

 

 

 

 

 

 

Roasted Potatoes and Carrots

6 potatoes, scrubbed and in chunks

16 oz  package baby carrots

1 McCormick brown gravy packet

1 Lipton golden onion packet

 

Mix brown gravy and golden onion packets with 2 cups water (total). Pour over carrots and potatoes in covered glass pan.

Bake at 325 for 2 hours.  Remove and add seasoning ( I used my favorite seasoning  of Perfect Pinch Roasted Garlic and Bell Pepper ).

You could also add onions and green peppers to the mix. Will try that next time!

 

 

 

 

 

Peach Pie

1 lb frozen peaches

1 cup brown sugar

1/2 cup white sugar

sprinkle of lemon juice

Mix peaches, brown sugar and lemon juice together in bowl. Spread in baking dish in single layer and bake at 400 for 45 minute, until soft and bubbling.

Mix in one cup white sugar and pour into oven safe pan ( I used mini cast iron bakers). Can also add 1 tsp vanilla.

Cover with pie crust, cut to fit. Brush peach preserves on top lightly.

Bake at 400 for 30-45 minutes, until brown.  Dot crust with butter and serve while warm.

IMPORTANT: Put pans on cookie sheet to bake, pie will bubble over and make a mess in your oven otherwise! Learned this one the hard way!!

 

 

 

 

Avocado Egg Salad

Adding avocado and cottage cheese to plain egg salad is really good!

 

2 boiled eggs, chopped fairly small

1 heaping tbs mayo

1 avocado, mashed into small pieces

2-3 heaping tbs cottage cheese

Mix eggs and mayo thoroughly. Add avocado and cottage cheese. Serve on toast or just eat plain. Will not keep since it has avocado in it.

 

 

Baked Butternut Squash

Melt butter in glass baking dish. Add cubed squash and brown sugar. Mix well. Bake at 350 for 40-45 minutes until caramelized. It looks really dark in the picture, but tasted very good. I used Trader Joe’s prepackaged squash, saving a lot of time and trouble.

 

 

 

Hamburger Patties with Onions and Mushrooms (adapted from online recipes)

Ingredients

1 lb hamburger
1 tsp McCormick Perfect Pinch Roasted Garlic and Bell Pepper
½ cup onions/green peppers mix
1 egg
¼ cup bread crumbs
flour for coating patties
cooking oil for frying and sauteeing
1 onion
1 glass jar of mushrooms
1 package beefy brown gravy mix

Directions

Mix hamburger, seasoning, onions/green pepper mix, egg and bread crumbs.

Form into patties. Coat in flour and fry in cooking oil.

Remove from skillet.

Saute onions in oil until soft and golden.

Mix jar of mushrooms(undrained) with brown gravy mix. Add a bit of water if needed. I like to use a mason jar with lid to mix sauces and gravies. No need to drag out the blender!

Combine mushroom gravy with onions in skillet.

Add patties(push them down into the gravy/onions) and simmer until thickened.

So Simple Cauliflower

Slice one head of cauliflower into thin florets

Grease a large flat baking pan, making sure entire surface is coated with oil.

Lay the florets flat, trying not to overlap much

Season to taste.I used salt and McCormick Perfect Pinch Roasted Garlic & Bell Pepper

Bake at 350 for 60 minutes or so. Flip a couple of times while baking.

 

I saw this on Pinterest several different ways, but the basics are the same. Slice, season and bake! Really good and so easy to make.

 

 

Creamy Simple Spaghetti

 1 jar Classico Traditional Sweet Basil Sauce

8 oz cream cheese

1 can diced tomatoes, drained

1 onion, chipped

1/2 stick margarine

1 TB garlic (I use Spice World minced)

Sautee onion and garlic in butter until golden. Combine with all other ingredients and simmer until cream cheese is melted. Continue to simmer until bubbling. Add to cooked spaghetti.

Stuffed Bell Peppers

1/2 cup cooked rice

1 lb cooked hamburger meat ( or  ground sweet italian sausage)

1 TB Herbs de Provence (or dried parsley if using sausage above)

1 can drained basil and oregano tomatoes

5  bell peppers

Mix first 4 ingredients and stuff peppers. Top with ketchup.

Steam for 75 minutes

Salmon Patties

4 packages salmon

1 cup mashed potatoes (can also use  small chunks frozen potatoes o’brian, thawed)

1 heaping tablespoon mayo

2 eggs

1 onion, chopped  (or  1/2 cup frozen, thawed)

1 small bell pepper chopped (or 1/2 cup frozen,thawed)

1 1/2 sleeves crackers, crushed

Mix all ingredients except 1 sleeve of crackers. Shape patties and roll in remaining sleeve of cracker crumbs. Drop into hot oil in skillet and mash flat. Fry first side until brown and crispy, flip over and fry other side. Top browned side with ketchup while frying other side.

Squash Casserole

 

4-5 lbs squash ( yellow and green mild)

2 sticks margarine

2 onions, chopped

2 bell peppers, chopped

1 package hollandaise sauce, prepared

2 boiled eggs

8 oz package Velveeta cheese

Fritos

 

Boil squash till tender. Saute onions and pepper in butter with a sprinkling of sugar to sweeten.

Mix with all other ingredients and bake at 350 for 30 minutes.

Top with Fritos and bake another 10-15 minutes.
